Birthday Pie

Every year on my dad's birthday he would choose to have a pie rather than a birthday cake. His choice was never really a surprise but a toss up between cherry and rhubarb or rhubarb and strawberry pie. Mom often made rhubarb pie as we had our own patch out back. We also had a strawberry patch both of which dad loved and cared for. So in honor of dad here is a delicious recipe he would have loved. Happy Birthday Dad



2 cups rhubarb 
1 1/3 cups sugar
2 egg yolks
2 heaping tbsp flour
1/2 cup evaporated milk
Meringue:
2 egg whites
1/4 tsp cream of tartar
Add:
2 tbsp brown sugar
1/2 tsp vanilla

  • Beat egg yolks and milk. Add sugar and flour. Put egg mixture over rhubarb in unbaked pie shell. Bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees for 45-50 minutes.
  • Combine ingredients for meringue. Beat until stiff peaks.
  • Bake at 450 degrees for 6-8 minutes
